Grilled Asparagus, Corn, & Portobellos With Salad

Today was a favorite day of mine: a grilling day.

First thing I did was marinate the portobellos. In to the bowl went some vegan Worcestershire, vegan mayo, garlic, olive oil, salt & pepper, some seasoning from Buc-ee’s (I do not remember what it was but it was red and delicious–though possibly not the healthiest thing–”natural flavors”), a bit of cinnamon and cayenne pepper. Then the portobellos and the marinade were poured into a big baggie to soak.


Next up was the corn. I’m generally not a big corn fan, but the fam is. So for the corn I had a bit of vegan butter that I was tired of looking at in the refrigerator and some homemade taco seasoning that I wanted to use up before it lost its freshness. So vegan taco butter was made–and it was delicious. The plan for the corn ended up being eat it with the taco butter, a bit more taco seasoning, and a squeeze of lime–it was a good plan.

Next were the asparagus. We had this other seasoning from Buc-ee’s that I was fascinated by. It included activated charcoal. When I tasted it it was good but it also had this charcoaly taste that you could just tell would be so amazing on grilled vegetables. I put it on the asparagus and was instantly surprised at how GORGEOUS it was. You would think I would have put two and two together looking at the seasoning and then looking at the veggies, but I didn’t. It wasn’t until I saw it that I was like “OMG, that’s pretty.”


Ok just so you know how excited I got, I was like “This would be delicious and beautiful on the asparagus and the cauliflower.” We’ll have the tacoey corn with lime, with the spicy garlicky portobellos, and the simple grilled charcoal (but well seasoned) taste of the cauliflower and the asparagus (with a splash of lemon on the asparagus). But alas I got too excited. While the asparagus still look beautiful tossed in the activated charcoal seasoning, the cauliflower is another story. This is a pre-toss photo.


This is also why this is the only photo you will see of the cauliflower even though it was delicious.


And we had a salad to go with it tossed with a lemon garlic dressing.

My favorite kind of day.
