Roasted Potatoes, Tomatoes, & Onions


95% of the time, the simplest things are the greatest. This has to be one of my favorite meals. I roasted the potatoes with a bit of olive oil, smoked paprika, salt & pepper, garlic powder, & oregano, the tomatoes with olive oil, salt & pepper, & thyme, and the onions with a bit of olive oil & salt & pepper.

Simple but amazing and perfectly complementary.

It hasn’t been this delicious since the last time I made spaghetti salad or vegan macaroni & cheese.
